Abura soba

油そば

This is a dressed noodle dish with little or no serving broth. Mixing distributes the seasoning and oil through the noodles.

What to notice

An abura-soba bowl is dressed from the bottom rather than served with a separate dipping soup. Mix before adjusting the seasoning, following the shop’s advice.

Try it with your next bowl

When you try it, mix from the bottom before changing the balance with vinegar or chili oil.
